This is one of those basic soup that don't require anything fancy and that are ready in no time. It's not spectacular, but with the right spices and a noodle nest it makes a soothing concoction to enjoy before a heartier meal.
Not to mention its major advantage that is ready in maximum 15 minutes. :)
Ingredients (serves 2-3):
- 700 ml vegetable broth (can be made of soup cubes if they're bio)
- 2 noodle nests (make it 3 if serving 3)
- 2 small carrots (80 g)
- 3 tablespoons of peas from the can
- 2 tablespoons of sweet corn from the can
- 1/2 teaspoon curry powder
- 1/3 teaspoon freshly ground pepper
- 1 teaspoon mustard seeds (preferably pickled like we did)
- 1 tablespoon olive oil
Heat the stock and bring it to a boil, add the carrots, peas and corn, oil and spices (everything on the list except the noodles):
Let it boil for 6-7 minutes until the carrots start to soften. Then transfer to serving dishes:
Immediately dunk the noodle nests in the hot soup while it's hot. Let them moisten for 1-2 minutes:
Then stir well and the soup is done. Dig in! :)
