The Ratatouille from the movie Ratatouille :) (vegan)


Don't know 'bout you but I'm a big fan of zucchini and aubergine (easy to figure out if you're an old visitor-friend of our virtual kitchen). And, also, I find the idea of a animated furry mini-chef kinda sweet (yeah, my critical sense is getting tired, I know) so... from here to making the same ratatouille that was prescribed in an animated movie by a talking mouse (I must be losing it.. :D)... just a step :). 
As for the more general idea of a Ratatouille, the dish is typically French, Occitan (Provence) to be more precise and has a loooong history :)
I got a little inspired from various other attempts to recreate the dish, ranging from Good Food to the Smitten Kitchen.

Ingredients (serves 4):
  • 2 zucchinis
  • 2 aubergines (eggplants)
  • 2 bell peppers (red or orange or both)
  • 2 tablespoons olive oil
  • 1 onion
  • 5 garlic cloves
  • 300 ml tomato pulp paste
  • salt and pepper
  • 2 tablespoons dried thyme


Wash the veggies and gather them up:

After coring and tossing the inedible parts, slice them up (in equally thick slices, preferably):


Preheat the oven to 190 degrees C. Pour the tomato sauce and olive oil on the bottom of a baking tray:

Make a paste from the onion and garlic (using a blender), then toss it on top of the tomato paste layer:

Season with salt and pepper, then start covering it with slices of veggies (the more mixed, the better):

Continue until you've finished them all and the tray is full. Cover it with baking paper (you don't need to seal it fixed or anything):

Put in the oven and bake for 50 minutes. Take out (careful not to get burned by the very hot steam when you uncover the tray!), transfer on serving plates and dig in! :)
