Carrot, ginger and caramel marmalade


It's sweet, it tastes like caramel (with a touch of lightly burnt sugar), candied orange peel, soft sweet carrots and spicy ginger. It's ready quite fast too. Enjoy.



Ingredients (makes 2 250-300 ml jars):

  • 570 g carrots
  • 62 g fresh ginger
  • 600 g sugar
  • 150 ml water
  • 100 g candied orange peel


Clean the carrots and weigh the ginger piece:

Finely grate the carrots and peeled ginger (we used a food processor):

Put them in a pot with half the sugar over low-medium heat:

Stir well for about 5-6 minutes until you can smell the sugar beginning to caramelize. Then, add the water and the rest of the sugar and mix again:

Leave on medium heat, stirring every now and then, until you can see the whole thing catch a dark caramel color and the carrots are softened (about 20 minutes):

Remove from heat and add the candied orange peel pieces:

Stir well and deposit into jars. It's done! :)
