Spicy and cheesy oven-baked crispy nachos in a classic Mexican version. Ready very fast (like 10 minutes or so) and delicious throughout a movie-night. :)
This uses three kinds of cheese (all with a role in the final layered flavor depth) and spicy jalapenos.

Last year: Fruit chaat (Indian fruit salad) (raw vegan).
Two years ago: Baby making and no cooking :).
Ingredients (serves 2-3):
- 250 g tortilla chips (nachos)
- 4 slices of Cheddar cheese
- 100 g hard goat cheese (like Gouda), grated
- 6-7 slices of pickled jalapeno peppers (from the jar)
- 1-2 tablespoons grated Parmesan
Preheat oven to 220 degrees C. Line a large baking tray with paper and spread the nachos in it. Top them with the cheddar, torn into large pieces, and the minced jalapenos (laid out mainly over the cheddar spots):
Top with the grated goat cheese.
Put them in the oven and let them bake for 5 minutes. Take out and sprinkle the Parmesan on them while they're still hot.
It's done, dig in! :)
