Brownies with mixed seeds and vanilla

I had a fantasy of creating some brownies studded with seeds (pumpkin, sunflower, pine nuts etc), but also strongly flavored with vanilla. And I don't just mean the regular teaspoon of vanilla extract, I mean full-on vanilla pods ground into the batter. Yes, that strong :)
And things couldn't have been better. Here it is :)
The basic recipe I improvised with is the same I use for the mascarpone marbled brownies or other variations, only with a bit less flour for extra moisture, considering the dryness of the seeds. Enjoy!

Last year: Cinnamon and brown sugar palmiers.
Two years ago: Diet cupcakes (muffins) with cranberries, spices and dark chocolate and Risotto with caramelized onions, artichokes and bacon.

Ingredients (for a 20-21 cm square dish):
  • 75 g flour
  • 100 g almond flour
  • 100 g dark chocolate
  • 100 g butter
  • 100 g brown sugar
  • 3 eggs
  • pinch of salt
  • 2 tablespoons creamy and thick vanilla extract (with vanilla seeds and ground pods in it), or the contents of two vanilla beans
  • 100 g mixed seeds (sunflower seeds, pumpkin seeds, pine nuts etc)

Preheat oven to 180 degrees C. Put the butter, broken chocolate and sugar in a pot over low heat:

Mix and melt until everything is well blended together. Remove from the heat and stir in the eggs.

Add the flour and the ground almonds (almond flour).

Mix well. Add the vanilla and almost all of the seeds.

Mix them well. Prepare the baking dish by lining its bottom with baking paper. Pour the composition in it and  sprinkle the remaining seeds on top:

Put it in the oven and let it bake for 35-40 minutes. Take out and allow to cool a bit:

Cut into squares, transfer to serving plates / platters / hands, and dig in! :)
