I had the idea of marinating pear segments in orange juice and dusting them with rosemary-infused sugar. The result was spectacularly simple and delicious but also fancy enough for a party. Enjoy :)
Last year: Beefsteaks in apple juice.
Two years ago: Broccoli and pancetta orrecchiette, Noodle salad with black sesame and Chocolate and stout cupcakes.
Ingredients (serves 2):
- 2 medium green-hued pears
- juice from 1 small orange or half a regular orange
- 4-5 tablespoons raw sugar
- 2 small rosemary sprigs
Prepare the fruit and rosemary and place the sugar in a wooden mortar and pestle:
Cut the pears into slices/segments and arrange them in two serving cups. Cut the orange in half and juice one half over the pears.
The pears should marinate in the juice for 10-15 minutes. Meanwhile, finely chop up the rosemary and put it over the sugar:
Grind the sugar together with the rosemary to make the sugar more fine and to release the rosemary's essential oils into it:
After about 10 minutes of grinding sprinkle the rosemary sugar over the pear cups.
You're done, dig in! :)
