Don't know about you but I personally love poppy seed in bread and desserts. After making the Czech kolache (and finishing them :D) I began to wonder what to do next that would have the same adorable semi-sweet filling of poppy seed and cream. The easiest thing I could think of was adding orange juice and orange zest for a tangy flavor contrast and some flour, baking powder and milk and voila! The afore pictured cupcake muffins. Also, they're lighter than other muffins, containing reduced butter and such.
Spring is almost here with these :)
Ingredients (makes 12):
- 100 g poppy seeds
- 300 g flour
- 2 teaspoons baking powder
- a pinch of salt
- 100 ml freshly squeezed orange juice
- zest from one orange
- 75 g brown sugar
- 1 satchel of vanilla sugar
- 200 ml milk
- 50 ml cream
First, put the milk, cream, vanilla sugar, salt and poppy seeds to a small pot or bowl and mix:
Add the orange zest:
Add the orange juice and mix:
Add the brown sugar:
Mix, then add the flour and baking powder and mix again until all is incorporated:
Preheat oven to 180 degrees Celsius. Line a muffin tin with muffin papers:
Using a large spoon, transfer the composition to the muffin paper forms, filling them up to about 3/4.
Put them in the oven and bake for 20-25 minutes until risen and golden. Take them out and allow to cool a little:
Put them on a large plate and dig in! :)
