This is the ultimate way to get rid of egg whites. Given that most dessert recipes call for egg yolks people usually end up saving lots and lots of egg whites in their freezer that never end up being used... :). Well, this is the way to go.
Now, about the cookies: really delicious and easy to make. My mom's recipe (spiked a little with rum by me... :D) that made some of my childhood's days. Mainly a simple meringue (egg whites fluffed up) with grounded walnuts and some sugar. Yum.
Ingredients (makes 2 full serving plates):
- 200 g grounded walnuts
- 200 g sugar (preferably powder sugar)
- 3 egg whites
- 1 satchel baking powder
- 1 tablespoon flour
- 1 sprinkle of salt
- 10 ml (one tablespoon) white rum (or rum flavored essence)
First, mix the walnuts and sugar in a large bowl.
Then, mix the egg whites with the sprinkle of salt (preferably using an electric mixer) until stiff. Then put the meringue pieces over the walnut and sugar:
Add the rum and mix. Add the flour and mix.
Preheat oven to 180 degrees Celsius. Line a baking tray with baking paper. Mix the baking powder into the batter. Put a teaspoon of batter at a time on the tray, leaving enough distance between them:
Bake them for 25 minutes, then repeat the process with the other half of batter.
When all are done, arange them on large serving plates and dig in! :)
Note: best warm, but they also keep well for 2-3 days at room temperature.
