Caribbean ostrich steaks (Curaçaoan)



This is a more unusual recipe from Curaçao, using ostrich meat, prepared with jalapenos, garlic, lime and parsley, after the meat was marinated in a mix of citrus juices. The final result was refreshing and very tender.
For a taste of Curaçao, if you can find ostrich meat in your local stores, this is worth a try. :)

Ingredients (serves 2-3):
  • 1/2 cup olive oil
  • 1/2 cup orange juice
  • 1/2 cup lime juice
  • 2 scallions (green onions), chopped (optional)
  • 2-3 garlic cloves, finely minced
  • 1 tablespoon chopped fresh parsley
  • 1/2 jalapeño pepper, seeded and minced (wear plastic gloves when handling)
  • ground black pepper, to taste
  • 6 small or 3 large ostrich tenderloin fillets
  • 1 lime, sliced

Combine the oil, orange juice, lime juice, scallions, parsley, jalapeño, and black pepper to taste in a large zip-top bag. Add the ostrich and seal the bag, pressing out excess air. Marinate in the refrigerator for 2-3 hours.

Preheat a grill or a large cast iron skilled. Transfer the ostrich steaks to the grill or to the cast iron pan. Cook the steaks over high heat for 2-3 minutes on each side, until browned. 



Transfer to serving plates. Garnish with lime slices. It's done, dig in! :)
