This is a more unusual recipe from Curaçao, using ostrich meat, prepared with jalapenos, garlic, lime and parsley, after the meat was marinated in a mix of citrus juices. The final result was refreshing and very tender.

- 1/2 cup olive oil
- 1/2 cup orange juice
- 1/2 cup lime juice
- 2 scallions (green onions), chopped (optional)
- 2-3 garlic cloves, finely minced
- 1 tablespoon chopped fresh parsley
- 1/2 jalapeño pepper, seeded and minced (wear plastic gloves when handling)
- ground black pepper, to taste
- 6 small or 3 large ostrich tenderloin fillets
- 1 lime, sliced
Combine the oil, orange juice, lime juice, scallions, parsley, jalapeño, and black pepper to taste in a large zip-top bag. Add the ostrich and seal the bag, pressing out excess air. Marinate in the refrigerator for 2-3 hours.
