Cheese and carbs is one of the most addictive combinations out there. In this dish, we combined potatoes with a most generous dollop of melted cheesy goodness, with combined flavors and depths: Emmentaler, Cheddar and Parmesan.
We were happy to submit this recipe to this month's Sweet Romania challenge, focusing on a local and healthy choice of ingredients: potato (this recipe) and apple (the recipe to follow) :).

Two years ago: Red pepper and pesto pasta with smoked salmon and Fig salad with feta, rucola and cherry tomatoes.
Ingredients (serves 3):
- 750 g potatoes
- 2 tablespoons soy sauce
- 100 ml water
- 100 g emmentaler
- 2 tablespoons heavy cream
- 50 g cheddar cheese
- 4-5 tablespoons grated Parmesan
- a bit of salt to taste
Boil the potatoes. Peel and cut them into cubes. Heat the water, soy sauce, heavy cream and salt in a pan on low heat. Add the cheddar and stir until melted. Add the potatoes and stir. Top with the grated Emmentaler:
Stir again for another minute or two until all the cheese is melted. Transfer to serving plates and sprinkle grated Parmesan on top of each. It's done, dig in! (while it's warm)
