Take the classic breakfast of champions one step further: make it a pizza.
We used a Lehman-style (New York style) pizza crust, but you can make it on your favorite base or pre-made pizza dough. Just top it with the goodies and start your day with enough energy and good mood to move mountains. :)
Last year: Dukkah-coated turkey wraps.
Two years ago: Sweet pumpkin strips and Simple wellness salad with potatoes, apple, feta and egg.
Ingredients (serves 1-2):
- one portion of our puffy and thin pizza crust
- 4-5 tablespoons tomato sauce
- 1 handful of grated cheese like Gouda
- 6-7 bacon slices
- 1 egg
- salt and pepper (optional)
Preheat oven to 200 degrees C. Spread the dough in a round pizza shape on a baking paper lined sheet. Spread the tomato sauce on the base, top it with the grated cheese and the bacon slices:
Put it in the oven and bake it for 15-20 minutes. Take it out, top with the egg and sprinkle with some extra salt and pepper on the yolk if you want.
Return it to the oven for an additional 5 minutes. Take out, allow to cool a bit and dig in! :)
