Pumpernickel rounds with beef ham, mustard and cornichons


A simple idea for finger food using some basic things that go together well: grainy mustard, beef ham and dense, flavorful, dark pumpernickel bread. It could be handy for the party days ahead :)

Ingredients (for one platter):
  • 100 g pumpernickel bread rounds (if you can't find them, you can use a round cookie cutter to make them out of regular sized pumpernickel slices)
  • 2-3 tablespoons sweet grainy home-style mustard
  • 75 g beef ham, thinly cut
  • 2-3 pickled cornichons, preferably in salt brine rather than vinegar

Arrange the pumpernickel rounds on a serving platter.

Spread the mustard on them:

Top with the beef ham, folded in delicately if the slices are too long:

..And top with the pickled cucumber slices. It's done and ready to serve (now or later, keeping it refrigerated until serving). Dig in! :)
