If you like sun-dried tomatoes this is another way to allow them to enhance your meals: in a comfy potato salad, creamy with yogurt and mayo and greatly infused with lemon juice, chives and dill. Very easy to make and a nice comfort food.

Ingredients (serves 2):
- 700-800 g potatoes
- 7-8 sun-dried tomatoes
- 4 tablespoons yogurt
- 4 tablespoons mayo
- 1 tablespoon extra virgin olive oil
- a pinch of powder sugar
- 1 bunch of fresh dill (25 g)
- 1 bunch of fresh chives (25 g)
- salt and pepper to taste
- 1 tablespoon lime juice
Boil the potatoes whole until tender. Let them cool a bit. While they're cooling, prepare the rest.
Finely chop the sun-dried tomatoes and put them in the salad bowl. Add the extra virgin olive oil and mix.
Add the mayo, yogurt and powder sugar and mix well:
Peel the potatoes and cut them into large cubes. Add them to the creamy dressing:
Mix well. Finely chop up the dill and chives and add them too:
Mix well, season with salt, pepper and lemon juice and it's done. Dig in! :)
