Banana American pancakes with agave syrup and almonds


A quick breakfast you'll love. Thick and fluffy American-style pancakes, with mashed banana in the batter, drizzled with agave syrup and sprinkled with almond flakes. Crunchy and soft and not too sweet. Perfect for a sunny morning to get your in a good mood before you go about your business :)

Ingredients (serves 2):

For the pancakes:
  • 150 g flour
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • a pinch of salt
  • 120-130 ml milk
  • 1 egg
  • 30 g butter
  • 2 mashed bananas (very ripe)
  • sunflower oil or peanut oil for frying

To serve:
  • agave syrup
  • almond flakes


Mash up the bananas with a fork. Mix the flour with the sugar, baking powder and salt. Prepare the milk and egg also.

Pour the milk and beaten egg in the flour mix. Also add the banana mass and mix everything very well. Melt the butter and add it also.

Fry large tablespoons of batter in the oil in round shapes. We used a special pancake pan this time, but you can check out this post to see that it's quite doable in a normal pan too :)

Three-four minutes on each side should be enough. Take them out and repeat with the remaining batter until all is done. Divide between serving plates and also prepare the agave syrup and the almond flakes (you can toast them before for a more intense almondy flavor).

Drizzle syrup on top, sprinkle the flakes and dig in! :)
