Strawberry, banana and flax seed muffins


This is a simple to make and simple-tasting (in a good way) dessert, perfect for breakfast. It's not the impressive dessert you might serve for a dinner with friends, but it's definitely a comfort food for hurried mornings :)

Last year: no cooking due to another kind of bun in the oven.






Ingredients (for 8 muffins): 

  • 2 bananas
  • 50 g fresh strawberries
  • 80 g butter
  • 150 g flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 50 g sugar
  • 1 handful of flax seeds



In a blender, puree the bananas and strawberries:


Add the egg and butter:


Also add the flour, baking powder, vanilla extract and sugar and mix some more. At the end add the flax seeds and mix again:


Preheat oven to 200 degrees C. Line a muffin tin with 8 muffin papers and fill them 3/4 to the top with the batter. Bake for 25-30 minutes and they're done. Allow to cool and dig in! :)
