Insalata Caprese (Italian)

The traditional trio in the color of the Italian flag that go so well together in almost anything: mozarella, tomatoes and basil. :)
We've made it before assembled on skewers but this here is the real deal, traditional to the island of Capri. (More info on this traditional dish here).
It can be both a salad and a starter and it's one of our most loved salads. Enjoy :)

Last year: a different kind of bun in the oven (and no cooking due to continuous morning sickness). :)

Ingredients (serves 2):
  • 1 piece mozarella di buffala (125 g)
  • 3 small/medium tomatoes
  • leaves from half a bunch of basil
  • salt and pepper
  • a drizzle of extra virgin olive oil

First of all, prepare your ingredients. The cheese must really be mozarella di buffala (made of buffalo's milk) to stick to the tradition. Plus, it really is more flavorful than the cow's milk version.

Slice the cheese and divide between two plates. Slice the tomatoes in little wedges and also divide between the plates. Also add the torn basil leaves (torn with your hands, don't use a knife or you'll lose part of the flavor).

Mix them well, than add salt, pepper and olive oil to each plate. It's ready, dig in! :)
