Green pasta with Jamón serrano, Parmesan, mozzarella and olives


The Jamón serrano is a special type of dry air cured ham that comes from the Spanish cuisine. We've talked about it before and what you need to remember is that it's a very lovely delicacy. Here we've had it in a bowl of green pasta with some mozzarella slices, fresh tarragon, olives and a generous layer of grated Parmesan. The combination was lovely. Enjoy :)



Ingredients (serves 2):

  • 150 g green pasta
  • 2-3 slices of Jamón serrano
  • a small handful of fresh tarragon
  • 40-50 g grated Parmesan
  • 1 mozarella piece
  • 8-10 green olives
  • salt and pepper to taste
  • a few drops of olive oil


Cook the pasta according to package instructions. Cut the ham slices into smaller bits. Cut the mozzarella and the olives to slices. 


When the pasta is done, drain it and put it into serving bowls, tossing it with a bit of salt and pepper and olive oil:


Mix with the rest of the sliced ingredients:


Sprinkle generously with Parmesan and dig in :)

  2. Yes, pasta with olives is such a humble and basic combination but oh so classic and good. Just like Italian cuisine in general ;)
