Orange caramel pastry windmills


Pastry windmills baked with a good dose of home-made orange caramel (recipe here) that becomes molten and imbues their every bit with flavor and a little sweetness. A nice alternative to the regular windmills with jam or marmalade that one can find in pastry shops.




Ingredients (makes 12):
  • 1 roll of puff pastry from the store (275 g)
  • about 1/5 of a jar of orange caramel
  • 2 tablespoons milk (optionally)

Pre-heat oven to 180 degrees C. Roll out the pastry and cut it into squares of about 10 cm:

Arrange them on a baking tray and cut them out half-way diagonally (shown below) so you can fold them into windmills:

Do it by gently pressing one side of each cut down on the center, like this:

Continue until you've transformed all squares into windmills.

Optionally you may brush them all with a little milk. We skipped this step. Put about one teaspoon of orange caramel onto the center of each. You may spread it onto the sides also, it will pour out around them anyway.

Put them in the oven and bake for 25 minutes. Take em out, allow to cool (molten caramel is very hot):
