Brie, walnut and caraway salad


At our friend Laura's suggestion, we finally got around to make a salad that combines cheese and walnuts in a typically French manner. The caraway seeds bring flavor and a herbal spiciness to the Brie and walnuts, the salad leaves add freshness, and the red wine vinegar balance the overall taste giving it a sour hint. Overall, this was truly perfect. Not a side-dish type of salad, but wonderful as a main course or starter. Enjoy.
Note: The caraway and cheese combination is a classic in Romanian crackers ;).






Ingredients (serves 2):
  • 200 g mixed salad leaves (we used raddichio, lettuce, curly lettuce, white and red cabbage etc)
  • 200 g Brie cheese
  • 50 g walnuts
  • 2 tablespoons red wine vinegar
  • 2 tablespoons caraway seeds

First, put the salad leaves in a large bowl (if you have to wash them make sure you drain the extra water very well):

Cut the Brie into cubes and add them on top. Have the walnuts nearby:

Gently crush the walnuts with a fork into smaller pieces (not too small, just edible). Sprinkle the caraway and vinegar over the cheese:

Add the crushed walnuts:

Toss and you're done. Dig in!
