These traditional fritters (beignet-like) from São Tomé are considered traditional island fare, but they're also highly popular in Brazil, another former Portuguese colony. They resemble banana pancakes, only with a more liquid batter and more deeply fried.

Ingredients:
- 4 bananas, peeled
- 2 tablespoons sugar
- 1 cup flour (120 g)
- 1/2 cup milk (125 ml)
- 1 egg
- Cinnamon sugar
- Flavorless oil (for frying)
Mash the bananas with a fork and mix with the sugar and flour.
Whisk together milk and egg then stir in the banana mixture to form a batter.
Heat oil in a frying pan to 350F/180C. Pour batter a tablespoon at a time into hot oil and fry for about 5 minutes, turning halfway through cooking, until the donuts are golden brown.
Drain on paper towels and serve dusted with cinnamon sugar. It's done, dig in! :)
