A lovely idea if you're into courgettes and into making nice veggie meals and snacks out of fresh stuff. :). A batch of lovely courgette fritters like these is ready in no time, it tastes light and green and it's even more wonderful when served with sweet chili sauce (as we did above).

Ingredients (serves 3-4):
- 2 large courgettes
- 1 small carrot (optional; the original recipe didn't have it but I think it adds some extra flavor and texture)
- 100 ml milk
- 100 g flour
- 4 eggs
- 1/2 teaspoon salt
- olive oil to fry
- sweet chili sauce to serve (you can find it in most supermarkets and I highly recommend it for this recipe)
Grate the courgettes and carrot finely (after properly cleaning them and discarding their ends, of course), preferably with an automatic grater or food processor. Squeeze any extra water out of them and put them in a large bowl.
In another bowl, mix the milk with the eggs and salt and then gradually mix in the flour. When the batter looks smooth, mix in the grated veggies.
Heat a bit of olive oil in a pan and start frying spoonfuls of batter:
Keep them in the pan 2-3 minutes per side and then take out and fry the next ones and so on until all the mix has been turned into delicious golden green fritters.
Serve with sweet chili sauce. It's done, dig in! :)
