Chili and three chocolate chunk cookies


These easy-to-make cookies contain lots of cocoa and chili and white pepper powders in their base dough, and are then studded with three types of chocolate, broken into generous chunks: white chocolate, dark chocolate, and dark chili chocolate. The result, as you might already foresee, is a spicy and chocolicious crunchy mess, just perfect to enjoy with tea or coffee. :)
Besides all the wonderful flavors, the texture of these cookies is as close to perfection as they get: crunchy exterior and edges, with a slightly soft and chewy center. Delicious both hot from the oven, and cold the next day(s). Try them as soon as possible :)

Ingredients:
  • 225 g unsalted butter, softened
  • 100 g white sugar
  • 175 g dark muscovado sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 300 g flour
  • 50 g cocoa powder
  • 1 tablespoon Bourbon vanilla powder sugar
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoon cayenne pepper
  • 1 teaspoon ground white pepper
  • 100 g dark chili chocolate
  • 100 g dark chocolate
  • 100 g white chocolate


Preheat oven to 180 degrees C. Put both sugars in a large bowl and add the butter:

Mix well, then gradually mix in the vanilla extract and the eggs.

In a separate bowl, mix the flour, baking powder, vanilla sugar, cocoa and pepper powders. Slowly add the dry mix to the wet mix until everything has been mixed in an even dough:

Eagerly unwrap them:

Cut them into large-ish chunks and add them all to the cookie dough:

Mix carefully to incorporate them. Line a baking sheet with baking paper and drop spoonfuls of dough onto them, patting them slightly:

Bake in the preheated oven for 15 minutes, take out, transfer on a serving platter and allow to cool a bit:

Repeat with the remaining cookie dough if necessary (I baked for 2 rounds until I made all the cookies). It's done, dig in! :)
