Spicy sausage, olives and mozzarella pizza


An easy and relaxed dinner with a new version of pizza - the ultimate comfort food for movie nights and lazy days. :) The sweetness and creaminess of melted mozzarella provide a counterbalance to the spiciness and saltiness of sausages and olives perfectly. 
Goes wonderfully on thin and crispy pizza crusts (like mine here).

Last year: Batata harra (Lebanese spicy potatoes).
Two years ago: Spicy chorizo and chickpea soup (Spanish).
Three years ago: Chocolate chip cookies with salted butter (American).
Four years ago: Irish soda bread (buns) with mixed seeds.

Ingredients (serves 2-3):
  • my crispy pizza crust
  • 3-4 tablespoons tomato paste
  • 40 g grated emmentaler cheese
  • 50 g spicy tirolese dry sausages
  • a handful of green olives, stoneless
  • 125 g mozarella cheese (5 minutes before the end)
  • 1/2 of a small red onion (5 minutes before the end)

Preheat oven to 220 degrees C. Roll out the dough and put it on a baking paper-lined sheet. Spread the tomato paste on it and sprinkle the grated emmentaler evenly on top:

Chop up the green olives and spread them on top. Also slice the little sausages and scatter them around the pizza.

Put in the preheated oven and bake for 20 minutes. Then, take it out, add the chopped red onion and sliced mozzarella cheese:

And put it back in the oven for another 5 minutes. Take out, slice and dig in while it's hot (later the mozzarella will harden and you'll lose part of its charm). :)
