Gashouse Eggs (Sunshine Toast) (American)


This classic recipe of sunshine toast (a piece of toasted bread with a sunny-side-up egg) was first developed by the Gashouse restaurant, presumably. Other names for this dish are eggs in a pocket, one-eyed jack or baby in the hole. :).
The bread round which is cut out of the main slice is toasted as well, and it's perfect for dunking it in the runny egg yolk and for scooping out the delicious liquids. It's also a breakfast idea very popular with the kids. :). Enjoy!

Ingredients (for 1):
  • 1 slice of square bread (I used whole wheat)
  • 1 egg
  • 2-3 tablespoons butter
  • pinch of salt and pepper

Cut out the round in the middle of the bread slice, using a large cookie cutter or the rim of a glass. Melt the butter in a frying pan and put the slice and the cut-out round in it. Let them fry on one side, then turn them over.

Break the egg into the hollowed bread, then add a pinch of salt and pepper to the egg yolk. Reduce heat to low and cover the pan with a lid. Let it cook until the egg is mostly done, with a runny yolk. 
Transfer to a serving plate. It's done, dig in! :)
