Smoked salmon and scallion omelet


A quick and easy lunch with delicious bits of smoked salmon and scallions, folded in half to keep the savory filling inside. Enjoy :) 

Last year: Bob chorba (Bulgarian bean soup) (vegan).
Two years ago: Caviar on mashed potatoes (Russian).
Three years ago: File Marajoara (Steak with melted cheese) (Brazilian).
Four years ago: Baby making and no cooking :).




Ingredients (serves 1):
  • 2 eggs
  • a bit of olive oil
  • salt and pepper to taste
  • 1 teaspoon dried herbs (like Herbes de Provence)
  • 2 slices of smoked salmon (30 g)
  • 1 scallion 

Beat the eggs with the salt, pepper and herbs. Chop up the salmon and scallion (use only the green part). Heat the oil in a small-medium frying pan and add the egg mix.

After 2-3 minutes, when it seems mostly done, add the salmon and scallions on one half of the circle.

Fold the free half over it and let it cook for a few more minutes on low heat. Carefully flip it on the other side (maintaining its shape and filling) and cook it for one extra minute.
Transfer to a serving plate and it's done. Dig in! :)
