Sauce Gribiche (French mayo dip)


A classic French sauce meant to accompany French fries in a flavorful way. It's very simple and fast to make, as you only need to whizz the ingredients in a blender and then dip away :)

Last year: Home-made pita chips (vegan).
Two years ago: Pesto and caper focaccia (Italian) (vegan).
Three years ago: Tomato gratin provencal with garlic butter baguette.
Four years ago: Baby making and no cooking :).



Ingredients (for one small bowl):
  • 100 ml prepared mayo
  • 2 small pickled cornichons
  • one handful chevril (French parsley)
  • 1 hard-boiled egg, peeled
  • 1 teaspoon salt-packed capers
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon cayenne pepper



Put everything in the food processor / blender.

Puree away until everything looks reasonably mixed (don't overmix, the occasional tiny bits of egg and cucumber and herb are welcome). Transfer to a bowl and it's done. Dig in! :)
