French-style grilled cheese (with baguette and Brie)


Glorious grilled cheese! I (as any other sane person on the planet) love a well-made grilled cheese sandwich, and if it's given a French spin, then all for the better. All you need is a baguette and some flavorful Brie cheese to get the magic going for yourself.

Last year: Clafoutis Limousin (Black cherry clafoutis) (French).
Two years ago: Creamy banana, walnut and mascarpone cake.
Three years ago: Dark chocolate and red wine cake.
Four years ago: baby making and no cooking. :)



Ingredients (serves 2):
  • 1 mini baguette
  • 2-3 thick slices of Brie cheese

Cut the baguette in half horizontally and place the sliced Brie on it. I kept my cheese to a reasonable level (by regular dietary standards), but feel free to add more to yours if you want to splurge and indulge a little.

Place the bread halves back together to create a sandwich, then cut the sandwich in half and place it in a grill maker/ sandwich maker / panini press. Let it toast on high heat for 3-5 minutes or for as long as the machine recommends.
If you want, you can also make the grilled cheese simply in a frying pan, by pressing the sandwich with a spatula and turning it on the other side after 3 minutes or so. Whatever you prefer. I used a panini press myself and I'm usually very happy with the results.
