Vegan raspberry, cocoa and coconut marbled loaf cake (vegan)


For whenever you want a vegan baked dessert, either for dietary considerations or because of lent, this is the cake you should pick. The batter is divided in two and the white half is flavored with coconut, and the dark half is flavored with cocoa and raspberry jam. Both flavors are surprisingly intense and go very well together. 
What I love about it is the wavy pattern you get from alternating between the layers. I think it looks very lovely. The cake is tender and sweet and there's nothing you'll miss in its taste and texture. Give it a try. :)
P.S: I gave this cake to my friend Laura and she took it with her to a party. As soon as she arrived, I got a phone call and was invited insistently to that party although I wasn't a friend of those people. The cake is that nice :)

Ingredients (for one small loaf):
  • 1 cup sugar
  • 1/2 cup neutral-taste vegetable oil (I recommend rice oil instead of the highly-processed sunflower oil)
  • 2 cups flour
  • 1 cup water
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut flakes
  • 2 tablespoons cocoa
  • 2 tablespoons raspberry jam

Preheat oven to 200 degrees C. Line a small loaf tin with baking paper. In a medium-large bowl, mix the sugar with the oil, then gradually mix in the flour and baking powder, and then the water. If you use a hand whisk it's fine. Mix well into an even batter:

Transfer half of the batter to another bowl and add the cocoa and raspberry jam to one half, and the coconut and vanilla to the other half.

Mix the flavors into each bowl until evenly distributed. Get the prepared loaf tin and spoon a layer of white batter on the bottom, then gently add a few spoonfuls of brown batter on top, and so on.

Gently transfer it to the preheated oven (careful not to move it too much or you'll disturb the layers) and bake it for 45-50 minutes or until a skewer inserted in its center comes out clean.
Take out, slice and dig in! :)
