Little ham and pesto pancakes

These little pancakes are delicious, fast to make and quite consistent, which makes them ideal for a late brunch or an urgent snack for a looong day ahead :). They're made with little ham cubes, flavored with pesto and herbs and packed with melted Gouda. Ideally served next to a handful of fresh salad leaves kicked up with a bit of balsamic glaze (or plain balsamic vinegar).

Three years ago: Sincronizadas with cheddar, turkey ham and guacamole (Mexican).
Four years ago: Ricotta and black olives crostini (Italian), Carrot, ginger and caramel marmalade, Quick fried banana breakfast (Kewra-flavored) and Simple black and white loaf cake (cozonacel).

Ingredients (serves 3-4):

• 100 g flour
• 75 g smoked ham cubes
• 1 tablespoon pesto
• 50 g aged cheese (we used a Belgian variation of Gouda)
• 2 eggs
• 1 tablespoon dried parsley
• 1/3 teaspoon salt
• 4 tablespoons milk
• a little olive oil for frying
• salad leaves and balsamic glaze/vinegar for serving 

Mix the flour with the salt and parsley in a bowl. Break the cheese into bits over it (or grate it).

Add the eggs and the pesto:

Mix well, also adding the milk to make it a bit more loose. Add the ham cubes:

Mix well. Heat the oil in a frying pan and drop about 2 spoonfuls of batter into it, pressing it down to form a pancake:

Fry for about 2-3 minutes on each side. You can fry more pancakes at the same time, just be careful to leave enough space so you can turn them. When all are fried, arrange 3-4 on each plate and add salad leaves on the side, sprinkled with balsamic vinegar or glaze.
