Porkkanalaatikko (Carrot casserole for Christmas) (Finnish)


This is a traditional casserole based on grated carrot, rice, eggs and cream, and a delicious topping of butter and breadcrumbs. It's served as a side dish in Finland, especially around the winter holidays. It may taste a bit bland if you prefer spicy foods, but as a side to Christmas roast or the main course of your choosing, you may find it charming. :)

Four years ago: Spicy turkey fillet in coriander-tomato sauce and Butter and smoked salmon pasta.





Ingredients (for a 20X30 cm dish):

  • 750g carrots
  • 1 cup short grain rice
  • 3 eggs
  • 1 cup cream
  • 25g butter, melted
  • 1 tsp salt
  • Breadcrumbs and a few extra knobs of butter for the top

Preheat oven to 175 degrees C. Brush the baking dish with the melted butter (on the sides as well). In a large bowl, grate the carrots and add the rice.

Beat the eggs with the cream and the salt, then pour them over the carrot-rice mixture and mix well. Pour the whole thing in the baking dish and level it with the back of a spoon.
Top with breadcrumbs and extra butter.

Put the dish in the preheated oven and bake it for 50-60 minutes. Take out, allow to cool a bit, and slice into individual portions. It's done, dig in! :)

Note: this side dish is meant to be served warm and will get too dry if you reheat it, so plan carefully ahead.
