Brændende kærlighed ("Burning love") (Danish)


Scandinavian comfort food at its best. A plate of buttery and fluffy mashed potatoes topped with fried bits of onion and bacon, and nicknamed "Burning love" by the Danes. I guess this supports that theory which states that we express affection by feeding people. :) [I know I tend to].

Last year: Gorgonzola and white wine potato gratin
Two years ago: Prosciutto, chile and onion pizza.

Four years ago: Smoked salmon on lemon-herb butter toast.




Ingredients (serves 1-2):

  • 2-3 medium potatoes (450-500 g)
  • 1 thick slice of butter
  • 30 ml milk
  • salt to taste
  • 2 tablespoons butter
  • 1 yellow or red onion
  • 2 garlic cloves
  • 3-4 long slices of bacon (40 g)

To make this, boil the potatoes until tender, peel them, and mash them together with the slice of butter, milk and some salt to taste. Transfer them to a serving bowl and keep warm.
Heat the remaining butter in a small pan and add the minced garlic. After a minute, add the chopped onion and the chopped bacon. Fry them around until the onion is golden and tender, and transfer the whole thing on top of the potatoes.
It's done, dig in! :)
