Radish, smoked salmon and orange salad (raw)


Spring is definitely here, so we all tend to opt for lighter and fresher fare. Therefore, I decided it would be a good time to share this. Another raw salad that combines fruit and vegetables with the delicious smoked salmon everyone loves. The combo is good in terms of nutrition, in terms of flavor and in terms of color :). Enjoy.

Last year: Asparagus, mint and lemon risotto
Two years ago: Elder-flower-rum cream tartelettes with raspberries.
Three years ago: Salmon Smorrebrod (Danish)Upside-down banana cake with raisins and walnuts and Chinese-style pork sesame balls.





Ingredients (serves 1):
  • 1/2 of an orange
  • a handful of rucola
  • 50 g pink radishes
  • 50 g smoked salmon
  • 1 teaspoon red balsamic vinegar
  • 1/2 teaspoon sesame oil, cold-pressed
  • freshly ground pepper to taste
  • a few slices of red onion, chopped (optional)

Cut the orange into slices and gently cut out and discard rinds. Put the orange slices and their juice in a salad bowl. Add the finely slices radishes.

Season with pepper, sesame oil and the balsamic vinegar.

Also add the rucola and onion and mix again. Garnish with the torn salmon pieces. It's done, dig in! :)
