Peanut butter marbled brownies + 3 year blog anniversary


Today is our three-year blog anniversary :). (And also Romania's national day). This year, we're celebrating it by sharing something a bit simpler and homier than previous years, and what sweet thing could be homier than brownies or peanut butter? :)

To make this delicious crispy and creamy treat of brownies, all you need is almond flour, brown sugar, rum and dark chocolate. To make them over the top, also include a creamy treat in the middle (as if all the other ingredients weren't enough to get us hooked already): a nice dollop of peanut butter.

Ingredients (for a 21 cm square dish):
  • 100 g flour
  • 100 g almond flour (ground almonds)
  • 3 eggs
  • 100 g dark chocolate
  • 100 g butter
  • 100 g brown sugar
  • 100 g peanut butter (at room temperature)
  • pinch of salt
  • 1 teaspoon dark rum


Preheat oven to 180 degrees C. Put some baking paper on the bottom of the baking dish (they'll be really sticky without it).
Melt the butter and the chocolate together with the sugar over low heat:

After they're melted and mixed well, take away from the heat to cool a bit. Then add the eggs, previously beaten and mix again:

Add the two types of flour (previously mixed with the salt and baking powder).

Mix well. Also mix in the rum. The batter is done. Pour it into the prepared baking dish and also scoop in about 2/3 teaspoon of peanut butter in the center of each imagined square (I suggest 4 X 4 cutting for this size of dish).

Put into the hot oven and bake for 30-35 minutes. Take out, allow to cool a bit and slice.

It's ready, dig in! :)
