Kolrābju Salāti (Kohrabi and apple winter salad) (Latvian)



A nice winter salad very usual at everyday meals in Latvia. Kind of similar to the German Apple and Leek winter salad we also like :). If you're looking to keep the menu theme intact and as authentic as possible, try it as company to Karbonāde (Pork Cutlets With Chanterelle Cream Sauce) and Kartupeli ar Dillēm (Boiled Potatoes With Dill Cream). 
Of course, it's also good on its own or with a bit of country-style bread or as company to other dishes, but I like to go full ethnic every now and then. Cheers to the full Riga bistro experience! :)

Ingredients (serves 2):
  • 1/2 of a kohlrabi
  • 1 small yellow apple
  • 150 ml sour cream (low fat)
  • 1 tablespoon basil and pistacchio pesto
  • a pinch of salt
  • a pinch of lemongrass powder
  • a pinch of mustard powder


Grate the kohlrabi and cut the apple into strips. Mix them in a large salad bowl. Mix the rest of the ingredients for the dressing.

Transfer the dressing over the salad and mix well. It's done, dig in! :)

Note: Traditionally, this salad is designed to accompany a main course (like this lovely meat and potatoes dish here). But you can also have it by itself, with a crusty bread like dark rye or sourdough, to maintain the Eastern European feel of it.
