Nigella's Exceptional Salmon



A relaxed dinner for two, following the recipe of the lovely Nigella Lawson. After making it, you'll understand why it's called "exceptional": it's unbelievably good for the little effort and time required for the preparation. 
Everything is done on the stove top (no oven required whatsoever), the salmon is deliciously moist and lightly spiced; and it's served alongside hard-boiled eggs and a fresh salad with a warm bacon vinaigrette.

Ingredients (serves 2):
  • 2 salmon fillets (250 g)
  • 1 scallion
  • 2-3 large handfuls of mixed salad greens
  • 50 g chopped bacon
  • 2 tablespoons freshly squeezed lemon juice
  • 2 boiled eggs (optional)
  • extra salt (optional) and freshly ground pepper to taste

Fry the bacon on low heat in a frying pan.

When it looks crispy (in 3-4 minutes), remove the bacon and set it aside, keeping the fat in the pan. (Add a little extra oil if you want.) Put the salmon fillets in the pan and sear them on each side.

Lower the heat, cover the pan and continue to cook them for 4-5 minutes until cooked through. Meanwhile boil the eggs. Also combine the salad green and the chopped scallions in a large bowl.
When the salmon is done, transfer it on serving plates. Pour the lemon juice in the pan and mix it with the remaining cooking juices. Add the bacon and pour the whole vinaigrette over the salad.

Mix well and divide between serving plates, next to the fish. If using eggs, peel and slice them and add them too (one for each serving).
