Mixed seeds and honey crunchy hearts



The lightest and healthiest possible crunchy snack - no fat, no sugar, just a little bit of honey and lemon zest to give flavor to the seeds and some egg whites to glue them together.
After making the mix, I just grabbed a heart-shaped cookie cutter and filled it repeatedly with the lovely composition, baked them in the oven really fast (they burn easily) and voila - crunchy snacks in less than 30 minutes total time :).
Recipe adapted from Delicioasa (who was at the time celebrating her baby girl becoming 1 month old about the same time with ours) :).

Last year: Baked Brie en croute with apples and thyme (French).
Two years ago: Simplest veggie noodle soup, Caramelized onion and green garlic pizza, Fruit skewers with molten double chocolate and Creamy pasta with green onions, muhrooms and ham (very light).



Ingredients:
  • 300 g mixed seeds (sunflower, pumpkin, soy, pine nuts, flax seeds, poppyseed and sesame)
  • 3 egg whites
  • zest from 1 orange (some orange flower water would also work well)
  • 3 tablespoons honey
Preheat oven to 180 degrees C.
Put the seeds in a bowl and mix them with the egg whites. Add the zest:

Mix well, also add the honey and mix and the composition is done.
Line a baking sheet with baking paper and put a cookie cutter on it, starting from a corner. Fill it with seeds mix al the way to the top, pressing and leveling it with your fingers. Gently remove the cookie cutter from around the thus formed heart, put it next to it and repeat.

And repeat until you fill the tray and you finish the seed mix:

(As you can see, just a wee bit of filling remained in our case, not enough to fill a regular cookie cutter, so we made a smaller little heart :) with another size of cutter).
Put them in the preheated oven and bake for 15 minutes (check if they're not burned starting with the 12th minute).
Take out and arrange on a platter and dig in! :)

Note: To be honest, this was a bit too on the light and healthy side for us so we decided to add honey or jam or nutella to the hearts each time we nabbed on one. I must say it wasn't a bad idea at all - especially topping them with honey. But if you want to have them on their own they're also good, so maybe try both ways and then decide for yourself :).
