Crispy cheese and guacamole tortillas


Crispy tortillas filled with melted cheese and smothered with cooling guacamole. Oven baked for a few minutes to crisp it up and melt the cheesy-interior. Topped with fresh cherry tomatoes and fresh coriander.
This Mexican-style snack is ready in about twenty minutes and it's a nice but light comfort food ideal for busy and tired week-nights. Enjoy :).

Ingredients (serves 2):
  • 4 wheat tortillas 
  • 50 g grated Emmetal cheese
  • 1 avocado
  • a small handful of cherry tomatoes
  • juice from 1/2 of a lime
  • 1/2 bunch of fresh coriander
  • 1-2 cm of a fresh red chili or 1/2 teaspoon chili flakes
  • pinch of salt and pepper or to taste

Prepare the ingredients:

Turn on the oven at 220 degrees C. Put two tortillas on the baking sheet and top them with the cheese:

Cover with the other two tortillas and let them bake for 8-10 minutes. Meanwhile, chop up the chili finely and crush the avocado's flesh with it. Add the lime juice, season with salt and pepper and the guacamole spread is done. When the tortillas are done, take them out of the oven and place one tortilla sandwich on each serving plate. Top with the avocado spread and the cherry tomatoes, sliced:

Also top with the coriander. It's done, dig in while it's warm! :)
