Zucchini, bean and cheese quesadillas


We're fans of quesadillas mainly because of their comfort food taste, but also because they're so fast to make. So we make them every time we don't have much time on our hands or we'd rather watch movies than spend our afternoon in the kitchen. 
Since our snacking routine relies heavily on wheat tortillas which we almost always seem to have around the house, all these quesadillas, sincronizadas and wraps should have become quite predictable by now :). This availability of wraps lying around makes such snacks even more so a "comfort" food. 
You can have them in various combinations, as long as you try to keep the ingredients Spanish or Mexican enough. 
Here we filled them with a red bean and zucchini mix, spiced with garlic and jalapenos and held together by delicious melted cheese. Enjoy.

Ingredients (serves 2):
  • 1 small zucchini
  • 1 garlic clove
  • 1 tablespoon olive oil
  • 100 g red beans from the can
  • 2-3 slices of pickled jalapenos
  • salt and pepper to taste
  • 50 g grated Emmental cheese
  • 2 tablespoons sour cream
  • 2 wheat tortillas

Wash the zucchini, discard its ends and slice it finely. Heat the olive oil in a large pan and add the sliced garlic to it. Fry the garlic for 2 minutes until fragrant, then add the zucchini slices:

Fry them until softened, turning them around once. It will take about 7-8 minutes. When it's done, add the beans and the minced jalapenos.

Cook the whole thing for 2 more minutes and season the mix with salt and pepper. Prepare the first tortilla according to package instructions (usually by dry-frying it on a large griddle). Put half of the zucchini-bean mix on one half of the tortilla:

Top with half of the cheese and half of the sour cream:

Fold the free side over the covered one. Flip it around and cook it for 2 more minutes on the hot griddle so that everything is bound together by the creamy filling.

Transfer the filled tortilla to a serving plate and cut it into 4 slices like in the main image. It's done, dig in! :)

P.S: You can also serve it with other toppings (like fresh tomatoes, minced, or salad leaves). We had them with a topping of black Spanish sausage:
