Lemon-pepper grilled chicken



Chicken breast pieces rubbed with a spicy-zesty mixture of pepper, lemon zest and juice and some lemongrass, then grilled fast on a fiery cast iron grill pan. The final result is a delicious main with a strong up-kick flavor that will make your day a bit sunnier.
Super easy, fast, and light :).
We had this with a side of Mexican rice.

Ingredients (serves 2):
  • 500 g chicken breast fillet (4 pieces)
  • 3 tablespoons olive oil
  • juice from half a lemon
  • zest from 1 lemon
  • 1 tablespoon crushed white pepper
  • 1 tablespoon crushed black pepper
  • 1/2 teaspoon dried and ground lemongrass
  • 1/2 teaspoon salt

Mix all the ingredients except the chicken in a bowl using a fork. Rub the chicken pieces with the spice mix and place them in the bowl where you had the spice paste:

Let them marinate for at least 10 minutes. (More would be even nicer if you had the time, but if you want to have food on the table in under 30 minutes, just leave them for 10.) Start heating the grill pan. Place them on  the grill:

After 3-4 minutes turn on the other side:

Grill for 3-4 minutes more and it's done. Take out on serving plates:

Grab your favorite side / salad / bread  etc and dig in! :)
