Breakfast croissants with Gouda cheese crust


Easy to make breakfast croissants for a lovely brunch. There's nothing like the taste of home-made yeast-based dough freshly baked. And when that's topped with a cheese crust things just couldn't get any better. 
As you can see, we had them with a pair of Mimosa cocktails, part of any good brunch :)

Ingredients (makes 16 mini-croissants):
  • 500 g flour
  • 100 ml lukewarm water
  • 150 ml milk
  • 50 ml vegetable oil (we used a parsely infused rasp oil)
  • 1 egg yolk
  • 25 g powder milk
  • 7 g dry yeast (1 satchel)
  • 1 teaspoon sugar
  • 2 teaspoons salt
  • 3 tablespoons milk + 1 tablespoon oil for brushing
  • 100-125 g grated Gouda cheese

Prepare a large bowl. Sift the flour into it and mix it with the powder milk and dry yeast. Mix the water, milk and sugar and pour them over the flour. Mix lightly and add the oil, salt and the egg yolk:

Work it into an even and not-so-sticky dough (5 minutes should be enough). Gather it up in a ball and let it rest, covered for one hour.

After the hour has passed and the dough has risen, work it some more to punch it down. Split it in half. Take one half and roll into a circle of maximum 1cm thickness. Cut it like a pizza into 8 slices, then cut about 1-2 cm into the wedge of each slice, like this:

Roll each slice to form a croissant, starting with the broad side. Arrange them on a paper-lined baking tray:

Repeat with the other half of dough and let the croissants rise again for one more hour. After the time is up, they should be puffed up. Preheat oven to 200 degrees C and brush them with the milk and oil (gently not to push them down) and sprinkle the cheese on them:

Put them in the preheated oven and bake for 15-20 minutes. Take out, allow to cool a bit and dig in! :)

P.S: they can be prepared in the evening and just be put in the oven in the morning to get them freshly baked without waiting too long to get your lovely breakfast ;)
