Herb-mustard-beer pancakes with cottage cheese and bacon


American style pancakes, savory and fluffy. With beer in the batter, next to sweet grainy mustard and herbs.
Creamy and chunky cottage cheese spread, again with herbs, grainy mustard and more beer. On top of the pancakes and dripping a bit over their edges.
A crispy fried thin smoked bacon slice on top. 
You bite it. It's crunchy and then soft and dripping and then chewy all in one. The flavors are harmonious and perfect. It's rustic and delicious. You want more.

Ingredients (serves 2-3):
For the pancakes:
  • 150 g flour
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 120 ml milk
  • 1-2 tablespoons light beer
  • 1 teaspoon grainy mustard
  • 1 egg
  • 30 g butter (a thick slice)
  • 1 tablespoon Herbes de Provence
  • olive oil for frying
For the cheese spread:
  • 200 g cottage cheese
  • 1-2 tablespoons light beer
  • 1/2 teaspoon Herbes de Provence
  • 1/2 teaspoon grainy mustard
  • salt and pepper to taste
To top:
  • 5-6 long strips of smoked bacon (about 50 g total)


Beat the egg with the herbs, salt, sugar, beer and mustard:

In a large bowl mix the flour with the baking powder. Add the milk, the melted butter and the egg mixture. Mix everything into a batter:

Let it aside for a bit. Put all the ingredients for the cheese spread in a small bowl:

Mix well. Prepare to fry the pancakes by heating oil in a medium frying pan. Drop large tablespoons of batter in it:

Let them fry for 2-3 minutes, then turn on the other side and fry for 1-2 minutes more (on medium heat).

Repeat with the remaining batter. (Meanwhile also fry the bacon slices, halved, in a separate pan). Keep going until you've finished:

Mix the cheese spread again (cottage cheese tends to separate in light mixes like this one) with a fork (a few strokes will do):

To assemble, spoon cheese mixture on each pancake, then top with a piece of bacon. Serve while the pancakes are still warm (even hot, preferably). Dig in! :)
