Creamy soup at its best without any animal ingredients. A nice and hearty warm-up on a chilly evening. Also a nice detox. Enjoy :)
Last year: Straciatella cream pie (Italian).
Ingredients (serves 4-5):
- 1 medium yellow onion
- 2 tablespoons olive oil
- 1 celery (not the root but the stalks)
- 1 cauliflower
- 500 ml vegetable stock
- 500 ml unflavored soy milk
- 1/2 teaspoon nutmeg
- salt and pepper to taste
- toasted and salted soy seeds to serve (as croutons)
After it's softened add the chopped celery stalk:
Stir well and let them cook for 4-5 minutes. Then add the soup stock, soy milk and the cauliflower, broken or chopped into florets:
Stir once in a while and let them cook for 5 minutes, covered. After the 5 minutes are up and the cauliflower seems at least a bit softened when pierced with a fork, remove the lid, add salt and pepper and nutmeg:
Remove from the heat and puree with an immersion blender. Allow to cool a bit, transfer to serving bowls, add the soy seed croutons...
... and dig in! :)
