If you're a big fan of Brie and you'd like to have it in a light meal, this is the pizza for you. Also a nice thing to try if you're a bit bored of the classic tomato sauce-based pizza. The potatoes and thyme are just the thing needed to go with the Brie cheese. It may sound a bit unusual but it's just the thing for it, trust me.
The idea is adapted from BBC's Good Food.
Last year: Potato salad with pesto and mozzarella and Egg, avocado and bacon breakfast spicy tartines.
Ingredients:
- pizza dough for two (we used our crispy vegan pizza crust)
- 200 g brie cheese
- 250-300 g potatoes
- 3 fresh thyme sprigs
- 1-2 tablespoons light cream cheese (optional)
Preheat oven to 200 degrees C. If using, spread a bit of cream cheese on the dough. Top with potato slices and thyme. Bake for 25 minutes:
Slice the Brie and put it on top of the pizza:
Return to the oven and bake for 10 more minutes. Take out:
Slice and dig in!
