French fries with red onion (vegan)


We love this simple combination for days when you're not in the mood for anything too complicated. It may sound a bit "rough" but red onions are so flavorful that having them raw is free of the yucky downside white onions would pose. And the fries are the perfect match for it.
Go easy on the spices - as you can see we used almost none, which if you know us by now you must understand how hard it was ;) - don't overpower the basic strong aromas of fries and red onion :)



Ingredients (serves 2):

  • 800 g - 1 kg potatoes
  • 1 large red onion
  • salt and a little freshly ground pepper
  • olive oil for frying


Peel the potatoes:

Cut them into rustic, not too thin, wedges:

Heat olive oil in a pan and fry them for 3-4 minutes on each side, taking care to turn them in time. Work in batches to avoid overcrowding the pan:


Peel the onion and cut it in rings. Season the fries with salt and pepper to taste and add the fresh onion rings on top of each plate:

It's ready, dig in! :)
