The ultimate breakfast treat or hearty snack to enjoy during the day. Scrambled spicy eggs are topping freshly made bread (or freshly toasted) covered in asian-infused mayo and half a crispy bacon slice and avocado pieces. Delicious and sunny and full of energy. Guaranteed to restore a smile in almost every circumstance ;).
Ingredients (serves 2):
- 2 mini bread loafs (or English muffins)
- 2 long slices of smoked bacon (if the slices aren't the extra long type just use 4)
- 4 eggs
- half a avocado
- 4 tablespoons mayonnaise
- 1 teaspoon tikka masala curry paste or chili paste (Sambal Oelek) or any other spicy red paste you have around
- paprika dust
First, cut the bacon slices in half and roast them until crispy:

Cut the mini loaves in 2, lengthwise and toast them in the oven. We didn't need too, because the bread was already hot, freshly out-of-the-oven baked :). After the bacon's done, remove it from the pan, leaving its oil drippings in, and add the eggs (don't add extra salt, there's enough in the mayo and bacon):
Scramble them with a spoon as you fry them for about 1 min and they're done:
Mix the mayo with the curry paste and spread it on the bread. Top with (half) a slice of bacon:
Add a few avocado slices on top:
Top each with a quarter of the scrambled eggs and sprinkle paprika on top. Serve warm. It's ready, dig in!
