Spinach and cheese crostini

A nice, rustic and fast way to finish up the remaining filling from the Tirolese dumplings. The spinach, salty cheese, nutmeg, fried garlic and onion, boiled potato, salt and pepper make a tasty and healthy green paste that can't wait to be smeared on a good piece of ciabatta bread and baked in the oven. Enjoy and serve while hot.

Ingredients (serves 2):
  • the remaining filling from the dumplings
  • 1 loaf of ciabatta (300-350 g)
  • 1 lime wedge
Cut the ciabatta bread in half, then cut it open again to obtain in the end 4 slices:

Get the paste out of the fridge and squeeze the lime wedge into it:

Mix, then smear it all over the bread slices and put them in the oven:

Bake for 10 minutes on medium heat, then take out and dig in!

  1. Actually, I've never thought of using some "leftovers" this way - thanks for an idea and thanks for sharing :-).
