Pina colada cupcakes (muffins)


These blondie cupcakes are to die for if you're a fan of pina colada. Lots of tropical love, with coconut flakes, butter, candied lime peels and a good pour of pina colada liquor. The taste speaks for itself, so give them a try and enjoy.

Ingredients (for 12 cupcakes):
  • 150 g butter
  • 200 g flour
  • 2 teaspoons baking powder
  • 50 g coconut flakes (shredded dried coconut pulp)
  • 125 g sugar
  • 4 eggs
  • 75 ml milk
  • 50 ml pina colada liquor
  • a few candied lime peel pieces to decorate

Yum. Get ready for yum. Melt the butter:

After it's melted, turn off the heat. Add the sugar and stir it all in:

Put the eggs in a small bowl (and yes, prepare the delicious sweet booze :D):

Lightly beat the eggs, and add them to the pot with the sugar and butter. In a separate bowl, mix the flour, baking powder and coconut flakes:

Add them too to the pot and mix well to incorporate everything. Add the milk and liquor and mix again and the batter is ready. 


Preheat the oven to 180 degrees C, line a muffin tin with paper forms and pour the batter into each with a large spoon. Fill up to 3/4 - 4/5 of each (to leave a little room to rise during baking).


Put in the oven and bake for 20-25 minutes. Take'em out:

While they're ht, push 1-2 candied lime peel bits into their top.
