Simple wellness salad with potatoes, apple, feta and egg



Another delicious and simple salad for when you're running behind on your intake of greens but also proteins. Ridiculously simple.

Another wellness salad here.




Ingredients (serves 2):
  • 200 g various salad greens, chopped (like salad leaves, lettuce, carrot, green onion etc)
  • 2 medium potatoes (150 g)
  • 1 egg
  • 1 tablespoon lemon juice
  • 1 medium green apple (100 g)
  • 1 teaspoon thyme
  • 1 tablespoon olive oil
  • 50 g crumbled feta cheese

Put the potatoes (after washing them) in fresh water and bring it to boil. Let them boil for about 30 minutes:

Put the salad greens in a large salad bowl:

After the potatoes boil, run cold water on them and peel them:


Put the egg in boiling water and leave it for 5-6 minutes. Cut the potatoes into round slices, place them on a small plate and drizzle lemon juice on top of them:

Cut the green apple into thin slices:

Add the apple pieces on top of the salad and sprinkle the dried thyme on top:


Then, add on top the lemon-marinated potatoes, then the feta:

Run cold water over the hard-boiled egg, peel it and cut into slices to place on top of the salad. You may mix if you like, we prefer it layered like this. Dig in!
