Bacon and eggs breakfast with a fresh touch (British)

The bacon and eggs breakfast, also known as English or European breakfast is an all-time classic. Very simple and basic recipe, but also very tasty and hearty. The name "bacon and eggs" was popularized in the 1920's, after physicians started recommending people to have healthier and heartier breakfasts (thus promoting this high protein-dish). Here, we had a classic and simple approach, topped with a little something fresh to balance the overall feel. Enjoy! :)

Ingredients (serves 1):
  • 1 egg
  • 2 raw bacon strips (un-smoked)
  • 1 medium cucumber
  • 1-2 drops of lemon juice
  • salt and pepper to taste
  • a drop of cooking oil
Put a drop of oil in a frying pan and crisp the bacon strips, on lowest heat intensity.

Leave them for 3 minutes on each side. Meanwhile, grate the cucumber (without peeling it) on a medium grater:

Squeeze the cucumber mass after grating it to drain excess water. Set it on the side of the serving plate. After crisping the bacon on the second side, add the egg:

Make sure the bacon strips frame it properly. Add a few drops of lemon juice to the cucumber:

Flip the egg on the other side (including the bacon). Make sure you don't leave it more than a few seconds, so the yolk is still gooey and dripping when you put it on the plate. Add next to the grated cucumber and serve immediately. Dig in! :)

  1. The "fresh touch" can also be a bit of baby spinach steamed in butter. To reduce the amount of fat one could just set the bacon on the grill (for the charcoal design) Nice alternative with the cucumber though :) Unfortunately the one that are out of season seem to be a bit tasteless ..in Romanian markets anyway . nice job guys
